PORRIDGE WITH APPLE PUREE AND FRESH BANANA

Great healthy start to the day – provides lots of energy to carry you through to lunch.

Make the porridge oats in a pan  with water in the proportion of one mug of oats for two people, and two mugs of water.  Bring to bubbling on the stove, stirring till thick and oats are tender. Sweeten to taste. 

Apple Puree:

Peel core and chop one cooking apple and place in a pan with a  knob of butter, splash of water and 2 tbsp sugar.  Bring to bubbling then simmer covered till the flesh is soft.  Mash with a fork to a smooth paste or blitz with a hand blender.  Cool.  

Serve topped with the apple puree and sliced banana.
