Potato Cakes

Ingredients:

  • 500g cooked potatoes, mashed
  • 30g butter
  • 1 Egg
  • 1 large onion
  • 2 tsp salt
  • 100g flour

Method:

Chop the onion finely and sautee in the butter, once the onions are lightly browned add the potatoes and the egg and salt and mix well.  Add in the flour.   Knead the dough until it forms a ball. Roll the dough on a floured board to a thickness of 1/2 cm. Cut or shape into circles.

Cook on a hot oiled pan till both sides are brown.

Serving suggestion:

Delicious served with butter.

You may also add spinach or cheese, to the above mix.
To make a fish cake, you can just add cod,
tuna or salmon to the potato mix.
