Scallop Caprese Baguette


1 lb. sea scallops, halved
¼ tsp. Sea Salt
1/8 tsp. crushed red pepper flakes
2 tbsp. Olive Oil
12 (1/4 inch thick) baguette slices
3 Beef tomatoes, thinly sliced
2 (6 oz) Mozzarella balls (fresh, thinly sliced)
½ cup chopped fresh basil

Drizzle Balsamic Vinegar (optional)

Serves 6 (2 each)


Preheat oven to 375 F.  Sprinkle scallops with salt and red pepper flakes, drizzle with oil.  Sear scallops in large non-stick pan coated with oil, 2 – 3 minutes each side.

Place bread in oven and bake 5 minutes, remove.  Top each bread slice with tomato, mozzarella and 2 scallop halves. 

Prep Time: 10 minutes

Cook Time: 15 Minutes

Serving Suggestion

Sprinkle with basil and a drizzle of Balsamic Vinegar.  S erve immediately.
