VEGETABLE BROTH

Wholesome soup with potatoes in it to bulk it up

Vegetable Broth

Serves 4

  • 2 tbsp sunflower oil
  • 1 onion, peeled and chopped
  • 2 carrots, peeled and chopped
  • Quarter of a swede, peeled and chopped
  • 4 sticks celery, chopped
  • 1 parsnip, peeled and chopped
  • 2 medium potatoes, peeled and in chunks
  • Can of chopped tomatoes
  • 1.2ltrs vegetable stock
  • Sea salt and freshly ground black pepper
  • Few leaves of fresh thyme

Heat oil in a pan and fry onion and garlic till soft but not browned.  Add remaining vegetables and cook for a few minutes.  Pour over the tomatoes and stock and bring to bubbling, cover and simmer till all is tender.  Season and add a few leaves of thyme.  Serve immediately.
